Tomato and Cucumber Salad

Two roma tomatoes for every one medium size cucumber.
Chopped up, with cucumber slices being thin.
Add rise vinegar, salt, pepper, green onion and one medium size clove of garlic.
Messure ingredients by taste, and enjoy! 

Optional: Feta Cheese and Avocado chunks!

Honey Cloud Pancakes

To make a single serving pancake you will need:
  • 1 large egg and 1 egg white
  • 1/4 cup of warmed milk
  • 1/4 cup of flour (plain will do, I used 00)
  • 1 pinch of salt
  • 2 teaspoons of honey
  • 1 dash of vanilla extract
  • 1 tablespoon of butter
  • Soft fruits
  • Honey
How to make them:
  1. Heat the oven to 200°C (which I gather is around 392°F)
  2. Heat a small 6″ oven proof frying pan
  3. In one bowl whisk one egg white until it is white and peaky
  4. To make the main batter, in another bowl, mix the the other whole egg with flour, salt, honey, and vanilla then whisk in the warm milk
  5. Gently fold the egg white into the batter with a metal spoon
  6. Melt one tablespoon of butter in the hot pan
  7. Pour the batter in and cook on the hob (stove top) for a few minutes until starting to set at the very edge
  8. Sprinkle some fruit on top
  9. Bake the whole lot in the hot oven for 7 minutes until puffed up and golden
  10. Drizzle with honey

Banana Ice Cream

Ingredients:
1 in. slices of frozen bananas
Almond Milk
Spoonful of peanut butter
Spoonful of Coco

Let bananas freeze for 1-2 hours. Put bananas in food procesure with a tiny bit of milk and blend until you get the consistency of ice cream. Add peanut butter and coco. Put back in freezer to let harden or enjoy right away!

Pear and Walnut Salad

  • Ingredients

    3 tablespoons pear nectar

  • 1 tablespoon seasoned rice vinegar

  • 2 teaspoons olive oil

  • 1/8 teaspoon coarsely ground black pepper

  • 2 cups torn mixed salad greens

  • 1/2 medium pear, cored and thinly sliced

  • 1/4 small red onion, thinly sliced and separated into rings

  • 2 tablespoons chopped walnuts, toasted

    Sprinkle of Garlic Salt

    Squirt of Lemon Juice


    Optional: top with fetta cheese and craisins.

Asian Slaw Salad

Definitely a favorite!


Ingredients::


For the Dressing

  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1/4 cup unseasoned rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon Asian sesame oil
  • 1 tablespoon peanut butter (I like Skippy Natural No Need to Stir)
  • 1/2 teaspoon salt
  • 1 tablespoon minced fresh ginger
  • large garlic clove, minced


For the Slaw

  • 4 cups prepared shredded coleslaw
  • 2 cups prepared shredded carrots
  • 1 red bell pepper, thinly sliced into bite-sized pieces
  • 1 cup cooked and shelled edamame
  • medium scallions, finely sliced
  • 1/2 cup chopped salted peanuts (or you can leave them whole)
  • 1/2 cup loosely packed chopped fresh cilantro


Combine coleslaw, shredded carrots, red pepper, edamame, scallions, cilantro and peanuts in a large bowl. Top with dressing and let sit for 10 minutes so the veggies can soak up the dressing.

Top with sesame seeds.

Sooooo good.

Explination

Instead of having a recipe book that could get lost or torn, I decided that blogging would be the way to go. Hopefully this makes college life easier! We'll see.
